Mango Chutney Recipe

GET THIS:
  • Diced mango (You can use fresh or canned mango.  I used two cans of canned mango.  If you prefer fresh mango, use 2 - 3.)
  • 1 diced medium sized onion 
  • 1 diced bell pepper (You can use any color.  I used a red bell pepper.)
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1 tablespoon hot sauce
  • 1 tablespoon vegetable or coconut oil
  • 1 tablespoon dark rum (You can also use brandy.)
  • 1/8 teaspoon cinnamon
  • 1/2 cup raisins
    DO THIS:
    1.  Heat the oil in a small sauce pan.
    2.  Place the diced onion, diced green pepper, and mango in the oil.  
    3.  When the onion begin to turns clear, add all of the remaining ingredients and cook for 20 minutes on a low heat.
    4. The chutney can be eaten on top of any meat.  (We like it best on chicken.)
