Banana Oatmeal Raisin Crumb Cake

For the cake-

  • at least 2 ripe bananas mashed (you can use up to 6 for this recipe if you have bananas that you need to use)
  • 1 large egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white sugar
  • 4 tablespoons butter (melted)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 cup oatmeal
  • 1/2 cup raisins

For the crumble-

  • 1/3 cup packed brown sugar
  • 1/8 teaspoon cinnamon
  • 1 tablespoon flour
  • 4 tablespoons oatmeal
  • 2 tablespoons butter (melted)
  • 1/3 cup shredded coconut
  • 1/3 cup chopped walnuts 
  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch springform pan with butter or cooking spray.
  3. In a large bowl, add all of the ingredients listed for the cake and mix with a spoon.

  4. Pour cake mix into the springform pan.
  5. In another bowl, mix all of the ingredients listed for the crumble with a fork.  (Keep stirring and mixing until all the ingredients are moistened by the melted butter)

  6. Layer the crumble evenly on top of the cake mix.
  7. Place the springform pan in the oven on the middle rack.  
  8. Bake in your preheated oven for 35 minutes (Tip: Poke the middle of the cake with a knife to see if it's done.  If there are very wet crumbs on the knife or you can see cake batter, then let it bake a little bit more in the oven.  If the knife comes out clean, then your cake is done.)
  9. Let the cake cool for 15 minutes before serving.

A scoop of ice cream or a dollop of whipped cream would go great with it!
