Gummy Bear Birthday Cake Recipe

*I adapted this recipe from Raspberri Cupcake after first seeing it on Pinterest.
  • 2 Boxed Cake Mixes (I used Betty Crocker's Super Moist Chocolate Fudge cake mixes.  You can use any flavor that you want, but remember to prepare your cake mix following the instructions on your box.)  
  • 3 eggs (for each box)
  • 1 1/4 cups of water (for each box)
  • 1/2 cup of vegetable oil (for each box)
  • 1 teaspoon of vanilla extract (for each box)
  • 2 tubs of cake frosting for the layers in the cake.  Choose a light-colored frosting.  (I have three tubs of Betty Crocker's Rich & Creamy Vanilla and Cream Cheese frosting pictured, but I only ended up using 2 tubs.)
  • 2 tubs of cake frosting for the outside of the cake. (I used Betty Crocker's Rich & Creamy Chocolate frosting.)
  • 12 tablespoons of whipped topping
  • Betty Crocker Gel Food Colors
  • 2 packs of gummy bears (You can really use any candy that you want.  I've made this with blow pops as well.)

  1. (Reminder: Prepare your cake mixes according to the instructions on the back of the box, if you are not using Betty Crocker's Super Moist Chocolate Fudge cake.)   Heat oven to 325F. 
  2. Grease the bottom and sides of your baking pans with butter or cooking spray.
  3. In a large bowl, beat cake mix, water, oil, eggs, and vanilla extract with a handheld mixer on low speed for 30 seconds and then on medium speed for 2 minutes. 
  4. Divide batters into four baking pans (I used 8" round pans). 
  5. Bake for 30 minutes.
  6. Take the cakes out of the oven and let them cool completely before you go to the next step.
  7. In a small container, mix 3 tablespoons of whipped topping and 1/2 a tub of the frosting with a spoon.  Then, add a 1/2 teaspoon of a gel food color.  (I selected blue for my bottom layer, green for my middle layer, and yellow for my top layer.)
  8. Cut off the top dome of your cake so that your cake is evenly flat.  Then, spread the frosting on the top of the cake.
  9. Get another cake and cut off its dome to make it flat again and place it on top of the frosting.
  10. Repeat Step 7-9 for the next 2 gel colors and then spread it on the second cake.
  11. Mix the chocolate frosting with 3 tablespoons of whipped topping and then frost the outside of your cake.
  12.  Decorate with gummy bears and candles.  (Yes, it's totally fine if you eat a few of the red gummy bears for quality control purposes.)
