Baked Breakfast Oatmeal Recipe

GET THIS:

  • 3 cups oats
  • 1 cup brown sugar (unpacked)
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup butter (melted)
  • 3/4 cups blueberries*
  • 3/4 cup shredded coconut*
You can substitute the blueberries and coconut with any fruits (dried, frozen, or fresh) or nuts/seeds that you want:  pecans, walnuts, sunflower seeds, raisins, strawberries, cranberries, mangoes, cherries, bananas, etc.  The combinations are endless.   I also add chocolate chips or butterscotch chips sometimes.  

DO THIS:

  1. Preheat oven to 350 degrees F.
  2. Mix all of the ingredients together in a large bowl. 
  3. Grease a 9 x 13 inch baking dish with butter or cooking spray.  (Tip:  Wrap dish in foil first then grease it for easy clean up.)
  4. Spread the mix into the baking dish evenly.
  5. Bake the mix for 30 - 40 minutes until the oatmeal is fully cooked.
  6. Cut the baked oatmeal into squares and enjoy. You can warm these up in the microwave for a quick breakfast on the go.
EAT THIS:

Have a slice of this baked breakfast oatmeal with scrambled eggs and turkey bacon!  Yummy!
